Poached apples, ham, cheese and eggs provide a hearty topping for toasted English muffins.
 

Ingredients

  • 4 English muffins: split in half, buttered and grilled
  • 2-3 tart apples, cored and cut into 8 thick rings
  • 4 cups water
  • 1 cup white wine
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 8 poached eggs
  • 4 oz 8 thin slices cooked ham
  • 4 oz soft brie cheese with thin skin, cut into 8 thin slices
 
Method

In a small casserole bring water, wine, sugar and vanilla to a boil. Add apple rings, reduce heat to a simmer, and poach apples until tender, 3-4 minutes. Allow apples to cool in poaching liquid until ready to use and save liquid for later use. When ready to serve, grill or toast muffin halves, and poach eggs. Place muffins onto plates, envelope each apple ring with one slice of ham, and place on a muffin half. Top with a poached egg and with a slice of Brie cheese. Place beneath broiler until cheese begins to melt. Garnish with arugula and drizzled with apple poaching liquid.

 

Notes: You may wish to substitue the English muffins with a crust of fresh baked French baguette bread.
