Amaranth Porridge

Amaranth is a healthy seed that is cooked to perfection. This breakfast dish has the added goodness of cinnamon, honey, walnuts and peaches.
Ingredients
- 1 cup amaranth seeds
- 2 cups water
- 1/2 cup chopped walnuts
- 1/2 cup diced peaches or seasonal fruit
- 1 tsp cinnamon
- 1/2 tsp garam masala, an Indian spice
- 1 tbsp honey or to taste

Method
Add amaranth and water to a saucepan. Cover and bring to a boil over medium high heat, stir, and replace cover. Reduce heat and simmer 20 minutes or until water has been absorbed. Stir in remaining ingredients and serve.
