Apple Bacon Fritters with Warm Maple Syrup

Similar to a donut, these apple and bacon fritters taste wonderful with a drizzle of maple syrup.
Ingredients
- Oil for frying
- 2 medium apples, peeled and diced
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 2 tablespoons sugar
- 1 cup flour
- 1/2 teaspoon salt
- 1 slice bacon, cooked crisp and crumbled
- 1/8 cup confectioners sugar
- 3/4 cup maple syrup

Method
Preheat a small electric fryer filled half way with oil. In a medium bowl, combine apples, buttermilk, baking soda, sugar, flour, salt and bacon. Drop by teaspoonfuls into hot oil. Turn with tongs to brown on all sides then drain on paper towels. Place on a plate and sprinkle with confectioners sugar. Warm maple syrup in microwave for 15 second intervals until warm. Serve fritters with warm syrup.
