Apple Cinnamon Oat Pancakes

Applesauce and cinnamon flavor these moist and tender pancakes--top with a sweet orange flavored syrup.
 

Ingredients

  • Orange syrup:
  • 1 13 oz jar sweet orange marmalade
  • 1/4 cup orange juice
  • 1 cup apricot jam
  • 1/4 cup orange juice
  • 1/2 cup white corn syrup
  • Zest of 1 orange
  • Dry mixture:
  • 1/2 cup whole wheat flour
  • 1/2 cup quick or old fashioned oats
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Wet mixture:
  • 1 large egg, slightly beaten
  • 2/3 cup milk
  • 1/2 cup applesauce
  • 2 tablespoon vegetable
  • Other:
  • 3 tablespoons vegetable oil for skillet
  • 1/2 cup finely chopped nuts, optional

Method

Place all orange syrup ingredients in a small, heavy saucepan over medium heat. Bring to a boil, stirring occasionally, then reduce heat to low and simmer just until syrup thickens. Remove from heat and set aside. Syrup will thicken when removed from heat. Place all dry mixture ingredients in a medium mixing bowl. Stir to blend well. In a small mixing bowl, place all wet mixture ingredients and whisk until well blended. Add to dry mixture, stirring just until blended. Heat a griddle or a large heavy skillet over medium high heat until hot enough to make drops of water scatter. Brush with oil. Spoon batter, 3-4 tablespoons for each pancake, on skillet and cook until bubbly and dry around edges. Turn over and cook until golden brown. Continue until all batter is gone. Remove from heat, drizzle with syrup, and sprinkle with nuts.

 

Notes: Makes 14 three inch pancakes in 25 minutes. To store leftover syrup, pour into a container with a lid, secure tightly and refrigerate. It's great over ice cream or any desserts.
