|½ cup||Shredded Mozzarella Cheese|
|1½ cups||Shredded Cheddar Cheese, divided|
|8 slices||Pepper Jack Cheese|
|1× 14.5 oz can||Asparagus, drained or cooked fresh spears|
|1 tsp||Dried Parsley|
|2 tsp||Dried Minced Onions|
|1 tsp||Dry Mustard|
|½ tsp||Salt or, to taste|
|½ tsp||Pepper or, to taste|
|1 cup||Biscuit Mix|
Spray a 9 X 13 pan with nonstick spray.
Combine all ingredients, reserving 1/2 cup Cheddar and all of the Pepper Jack cheese.
Either refrigerate overnight or can be baked immediately.
Preheat oven to 350 degrees, then bake until center is set, about an hour.
During the last 10 minutes of baking, sprinkle the reserved Cheddar, and arrange the Pepper Jack cheese over the top.
This is a nice make ahead breakfast for stay over guests, so you are not a short order cook in the morning. Especially nice with fresh fruit. You can substitute any cheese that is your favorite, Swiss is also nice. Another substitution would be cooked pork sausage, or crispy bacon, instead of the ham.
