Asparagus Ham and Cheese Make Ahead

A great make-ahead breakfast dish--just mix, refrigerate, and bake when you're ready to serve.

  • Servings: 10-12

Ingredients:

6 Eggs
½ cup Shredded Mozzarella Cheese
1½ cups Shredded Cheddar Cheese, divided
8 slices Pepper Jack Cheese
1× 14.5 oz can Asparagus, drained or cooked fresh spears
1 tsp Dried Parsley
2 tsp Dried Minced Onions
1 tsp Dry Mustard
½ tsp Salt or, to taste
½ tsp Pepper or, to taste
1 cup Biscuit Mix
2 cups Milk

Directions:

Spray a 9 X 13 pan with nonstick spray.

Combine all ingredients, reserving 1/2 cup Cheddar and all of the Pepper Jack cheese.

Either refrigerate overnight or can be baked immediately.

Preheat oven to 350 degrees, then bake until center is set, about an hour.

During the last 10 minutes of baking, sprinkle the reserved Cheddar, and arrange the Pepper Jack cheese over the top.

Helpful Tips:

This is a nice make ahead breakfast for stay over guests, so you are not a short order cook in the morning. Especially nice with fresh fruit. You can substitute any cheese that is your favorite, Swiss is also nice. Another substitution would be cooked pork sausage, or crispy bacon, instead of the ham.
