Autumn Pumpkin Bread

An ultra-healthy, whole wheat and pumpkin bread--great for breakfast or a quick snack.
 

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/4 cup wheat germ
  • 1/3 cup sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup oil
  • 1/4 cup soy milk
  • 3/4 teaspoon vanilla
  • 1 cup canned pumpkin
  • 1/2 cup chopped walnuts

Method

Preheat oven to 350 degrees. In a large mixing bowl, stir together flour, wheat germ, sugar, cinnamon, baking powder, baking soda and salt. In a medium mixing bowl, combine canola oil, soy milk, vanilla and 1 cup canned pumpkin. Add wet ingredients to dry ingredients and mix until thoroughly combined into a thick batter. Pour batter into a nonstick loaf pan. Spread walnuts on top of batter and bake 45-50 minutes, or until a toothpick inserted comes out clean. Cool 10 minutes in pan then transfer to a cooling rack and cool completely before cutting.
