Bacon and Egg on Toast Pie

A complete breakfast in one pan--just mix pieces of toast, bacon, hash browns and eggs in the evening and bake up fresh and hot in the morning.
 

Ingredients

  • 3 slices white sandwich bread, toasted
  • 12 slices bacon: cooked, drained and crumbled
  • 3 cups frozen shredded hash brown potatoes, thawed
  • 1 cup reduced fat processed cheese spread
  • 5 large eggs
  • 1/2 cup fat free half and half
  • 1 teaspoon red pepper sauce
  • 1/2 teaspoon paprika
  • 1/2 cup finely chopped celery
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon salt

Method

Lightly coat a 9 inch deep pie dish with vegetable cooking spray. Break toast into pieces to fit bottom of dish. Top with crumbled bacon, hash browns and cheese. In a medium bowl, combine last seven ingredients. Whisk until well blended. Pour over bacon mixture. Cover and refrigerate over night. To bake, remove from refrigerator 1/2 hour before cooking. Bake 30-35 minutes in a preheated 350 degree oven. Remove from oven and allow to sit 5 minutes before serving.

 

Notes: This dish is so easy to serve because it can be prepared the night before and popped into the oven in the morning. Serve with fresh fruit and orange juice. Delicious.
