Bacon and Scrambled Egg Salad

Scrambled eggs are combined with mayonnaise, mustard, fresh tarragon, bacon, green onion and relish to make a tasty sandwich that is great for brunch.
Ingredients
- 8 large eggs, scrambled
- 1/2 cup mayonnaise
- 1 tablespoon mustard
- 1/2 tablespoon finely chopped fresh tarragon, or to taste
- 1/4 cup chopped green onion
- 2 tablespoon sweet relish
- 4 slices bacon, cooked crisp and crumbled
- Salt and pepper to taste
- 6 kaiser rolls
- Leaf lettuce
- 6 slices tomato

Method
Scramble eggs in a nonstick pan until cooked through. Turn out on a cutting board and give them a good chop then let cool. Add chopped eggs to a bowl with mayonnaise, mustard, tarragon, green onion, sweet relish, bacon, salt and pepper to taste. Mix until the desired consistency. Assemble sandwiches with egg salad, lettuce and tomato. Serve immediately.
