Bacon Barley Baked Omelet

Can't make the perfect skillet omelet? Anyone can master this baked version with bacon, barley and plenty of melted cheese.
 

Ingredients

  • 1 qt refrigerated egg whites
  • 1 cup cooked barley
  • 1 pound lean smoked bacon or Canadian bacon
  • 8 oz 2% shredded cheese of your choice
  • Parsley flakes and smoked paprika for garnish
  • 1 tbsp water
 
Method

Chop bacon into bite sized pieces and fry until cooked through. If using Canadian bacon, frying time will be brief. Add barley and water to help bacon flavor infuse barley. Spray a nonstick glass casserole pan, then spread barley and bacon in pan evenly. Add cheese and egg product, then top with parsley adn paprika. Bake at 325 degrees for 50 minutes or until a knife comes out clean. Serve with salsa.
