Bacon Cheddar Breakfast Sandwiches

Take breakfast on the go with a simple sandwich of French bread, bacon, melted cheese and scrambled eggs.
 

Ingredients

  • 8 slices thick cut bacon
  • 8 slices day old French bread
  • 6 eggs
  • 1 cup cream
  • 4 slices mild cheddar cheese
  • 2 tablespoons butter

Method

Oven fry bacon until crispy then drain on a paper towel lined plate. Heat griddle to 350 degrees. In a mixing bowl, beat eggs and cream then set mixture aside. Assemble sandwiches with 2 slices bacon and 1 slice cheese between two slices of bread. Melt butter on griddle. Dip each sandwich into egg mixture, place on griddle, and cook 2 minutes on each side.

 

Notes: Bacon can be pan fried, but oven frying makes a crispier bacon, and less mess.
