Baked French Toast

This tasty dish is very simple to prepare ahead of time for your next brunch. The bottom layer of caramel and fresh blueberries is delicious.
Ingredients
- 1 cup packed light brown sugar
- 1/2 cup butter, melted
- 1 tbsp corn syrup
- 1 loaf country white bread
- 7 eggs
- 2 1/4 cups milk
- 2 1/2 tsp vanilla
- Cinnamon, optional
- Fresh or frozen blueberries, optional

Method
Grease a 9 X 13 baking dish. Warm sugar, butter and corn syrup in microwave. Pour into dish and spread evenly. Cut bread in half and arrange snugly in dish. Mix eggs, milk and vanilla and pour over top. Pat bread down again lightly. Sprinkle cinnamon on top of bread and add blueberries on top. Cover and refrigerate overnight.Bake at 400 degrees for 40 minutes. Uncover and cook for another 20 minutes or until lightly browned. Let sit 5-10 minutes before serving.
