Baked Quinoa Breakfast Pudding

This quinoa pudding is perfect for chilly fall and winter mornings. It warms you up and sticks with you all morning.
 

Ingredients

  • 1 cup milk
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups quinoa flakes
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 apple, peeled, cored and chopped

Method

Preheat oven to 350 degrees. Prepare an 8 inch square baking dish with nonstick cooking spray. In a large bowl, whisk together milk, eggs, maple syrup, cinnamon and nutmeg. Add quinoa flakes, baking powder and salt, then mix well. Stir in cranberries, pecans and apple. Pour mixture into prepared pan. Bake 25 minutes, or until top starts to brown. Serve with extra milk if desired.
