Banana French Toast with Caramel Sauce

Looking for a special breakfast idea? Your family and guests will love thick slices of French toast served with bananas, walnuts and a luscious caramel and rum topping.

12 slices Thick Texas Toast Bread
6 Large Eggs
½ cup Heavy Cream
2 tsp Banana Extract
3 Tbsp Butter
3 Large Bananas
1 jar Caramel Topping
1½ tsp Rum Extract
1 cup Chopped Walnuts


In a medium square or rectangular bowl, use a fork to mix eggs, heavy cream and banana extract. Slice bananas and set aside. Chop walnuts and set aside. Place caramel topping and rum in a very small saucepan and heat on low, stirring occasionally. Dip slices of bread in egg mixture, then fry in butter on medium heat, in a 13 inch frying pan, until golden brown on both sides, 3-4 minutes on each side. Arrange 2 slices of French toast on plates, top with bananas, drizzle with caramel sauce, and sprinkle with plenty of walnuts.

Helpful Tips:

If this is going to be served to adults only, you can replace the rum extract in the caramel sauce, with 2 tbsp light rum.
