Banana Nutella Pancakes with Banana Sauce

What an addition to brunch, banana pancakes with the added flavor of Nutella. The sauce is prepared with butter, brown sugar and amber rum.
 

Ingredients

  • 1 cup flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tbsp vegetable oil
  • 2 ripe bananas, mashed
  • 1/4 cup Nutella
  • Sauce:
  • 2 firm-ripe medium bananas, cut into 1/3 inch slices
  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 cup light brown sugar, packed
  • 1/4 cup light or amber rum

Method

Whisk together dry ingredients in a bowl. In another bowl, mix together the wet ingredients. Stir flour mixture into banana mixture. Heat a lightly oiled griddle over medium-high and cook pancakes until golden brown on both sides. For the sauce: Melt butter in a saucepan over medium heat and add brown sugar. Whisk, cooking until smooth and combined, about 1 minute. Add rum and bananas, then simmer, stirring occasionally, for 2 minutes. Pour warm sauce over pancakes.
