Beets add great color and flavor to this sweet oatmeal breakfast casserole concoction. Orange marmalade and brown sugar give this dish a sweet crust.
 

Ingredients

  • 1 8 1/4 oz can beets
  • 3/4 cup oatmeal
  • 1 Eggland's best egg
  • 3/4 cup light brown sugar
  • 1/4 cup sweet orange marmalade
  • 1 cup all purpose flour
  • 2 tbsp cornstarch
  • 1/8 tsp allspice
  • 1 tsp vinegar
  • 1 stick salted butter, divided
  • 1/4 cup milk or cream
  • 1/4 cup water, more or less, depending upon desired consistency
 
Method

Preheat oven to 350 degrees. In a saucepan, pour beet juice from beets. Add 1/4 stick butter, vinegar and 1/2 cup brown sugar. Simmer about 10 minutes and add beets. In another dish, combine water, cornstarch and 1/8 cup flour. Stir or whisk until blended. Add to simmering beet juice, stirring until thickened. Add orange marmalade and allspice then simmer another 10 minutes. In a separate bowl, combine oatmeal, egg, milk, water, remaining flour and butter. Add 2-3 tbsp beet juice mixture to give it color. Mix until it forms a sticky paste. If more liquid is needed, add more beet juice or water. In a loaf pan, spray with nonstick cooking spray. Using 1/2 of oatmeal mixture, layer bottom of baking dish. Add beets and top with the other half of oatmeal mixture. Sprinkle top with remaining brown sugar. Bake 40 minutes or until crust is crispy.
