Breakfast Burritos

These burritos are packed with rice, eggs and vegetables for a hearty breakfast that can't be beat.
 

Ingredients

  • 1 onion, chopped
  • 1 tbsp olive oil
  • 1/2 green pepper, chopped
  • 6 eggs
  • 3 cups cooked rice
  • 1/2 cup skim milk
  • 1 cup shredded cheddar cheese or Mexican blend cheese
  • 1 4.5 ounce can green chiles, drained
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • Tortillas
 
Method

Heat olive oil in pan then saute onion and green pepper until soft. Whisk eggs in a bowl with milk. Add cumin and chili powder then pour over onion mixture. Add green chiles and cook until eggs are set, scrambled and done. Add rice and cheese. Heat until rice is warm and cheese melts. Serve in warmed tortillas.
