This brunch pizza for two has pizza sauce, bacon, red and yellow bell peppers, green onions and crumbled goat cheese on the crust, and eggs baked on top of it all.

Ingredients:

4 Thick Strips Bacon, sliced into ½" pieces
2" Piece of Red & Yellow Bell Peppers, cut into large dice
2 Green Onions, cut in ½" slices
1 Tbsp Olive Oil
1 Prepared Pizza Crust
2 Tbsp Pizza Sauce
Shredded Parmesan, to taste
Crumbled Goat Cheese, to taste
2 Eggs

Directions:

Preheat oven to 450 degrees. If using a pizza stone or cookie sheet, place in oven to preheat. Cook diced bacon over medium heat until bacon is just slightly crispy. Remove bacon and pour off rendered fat, leaving about 1 tsp in pan. Toss in peppers and onions; saute 2-3 minutes, until vegetables are just tender, then set aside. Brush olive oil on prepared pizza crust. With bottom of spoon, spread pizza sauce from center out to edges of pizza crust, leaving a half-inch border. Sprinkle Parmesan cheese and vegetables evenly on top of sauce. Add bacon and crumbled goat cheese. Place pizza on pan or stone and bake 5 minutes. Take out pizza and use a spoon to create two little "divots" to hold eggs. Crack eggs into the divots; sprinkle with salt to taste. Place pizza back into oven and bake about 10 minutes more. Keep an eye on the pizza so not to overcook eggs. When pizza crust is golden brown and the eggs are just done, remove pizza and let stand. The eggs will continue to cook with the residual heat. Cut pizza in half to serve.
