Brown Rice Bacon and Maple Muffins

These hearty breakfast muffins are packed healthy brown rice, flavorful bacon, and sweet maple syrup.
 

Ingredients

  • 1/2 pound maple flavored or regular bacon
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup cooked brown rice
  • 1/4 cup maple syrup
  • 1/4 cup vegetable oil
  • 1/4 cup sunflower seeds
  • 2 eggs, beaten

Method

Cook bacon until crispy then crumble and set aside. Pour bacon fat into a measuring cup, adding vegetable oil to cup if needed to equal 1/4 cup. In a large bowl, combine flour, baking powder, cinnamon and salt. In a medium bowl, mix together rice, syrup, oil, sunflower seeds, eggs, bacon and bacon fat. Add to flour mixture and stir until just moistened. Divide batter among 12 oiled muffin cups and bake at 400 degrees for 15 minute or until tests done. Cool 5 minutes, then remove muffins to a rack.
