Butternut Squash and Bacon Pancakes

Butternut squash, apples, raisins and crumbled bacon add sweet and salty flavor to tender pancakes--serve with warm maple syrup.
 

Ingredients

  • 2 1/2 cups mashed butternut squash
  • 1 large Granny Smith apple; peeled, cored and grated
  • 1/2 pound bacon, cooked and crumbled
  • 1/4 cup raisins
  • 2 large eggs
  • 1/3 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 tsp black pepper
  • Vegetable oil for frying
  • Butter for serving
  • Warm maple syrup for serving
 
Method

In a large mixing bowl, combine all ingredients, except oil and maple syrup. Heat 1-2 tablespoons oil in a large skillet over medium low heat. Drop enough batter into skillet to make 4 inch pancakes. Brown cakes on both sides, about 3 minutes per side. Remove pancakes from pan and drain on paper towels. Repeat with remaining batter, adding oil to skillet between batches, as needed. Serve pancakes topped with a dab of butter and warm maple syrup.

 

Notes: These pancakes are simple to make and delicious to eat. Everyone will certainly clean their plates and ask for more. Nice to make for those special stay over guests.
