Cajun Crab Brunch Bake

This dish really captures the flavor of New Orleans. The sauted trinity of celery, peppers and onion complement the crab perfectly.
Ingredients
- 2 tablespoons butter
- 1/2 cup finely minced celery
- 1/2 cup finely minced red pepper
- 1/2 cup finely minced onion
- 6 eggs lightly beaten
- 2 cups half and half
- 16 ounces crab meat
- 8 day old croissants, torn into 1 inch pieces
- 1 1/2 cups shredded Swiss cheese
- 2 teaspoons cajun seasoning
- 1 teaspoon salt

Method
Preheat oven to 350 degrees and grease 11 X 17 inch baking pan. In a large bowl, mix beaten eggs, half and half, crab meat, torn croissants and cheese then set aside. Meanwhile, in a medium skillet over medium high heat, melt butter and saute celery, red pepper and onion until softened, 8-10 minutes. Let cool slightly, then stir into egg mixture until well blended. Transfer to prepared pan and bake 45-50 minutes, or until golden brown and set in center. Let rest on a cooling rack for 10 minutes before serving.
