Cheese Blintz Bake (Gluten-free) with Balsamic Strawberry Sauce

Gluten-free baked blintzes are perfect for a holiday breakfast, brunch or dessert. Top with your favorite jam or try this easy to make Balsamic Strawberry Sauce.

For The Batter:
3 Eggs
½ cup Milk
1 Tbsp Sour Cream, or yogurt
2 tsp Sugar
½ tsp Vanilla Extract
1 cup Pamela’s Baking & Pancake Mix
3 Tbsp Butter, melted
For The Filling:
15 oz Container of Ricotta Cheese
8 oz Cream Cheese
2 Eggs
¼ cup Sugar
½ tsp Vanilla Extract
½ tsp Kosher Salt
1 Lemon, zested and juiced
For The Sauce:
1 lb Strawberries
3 Tbsp Balsamic Vinegar
½ cup Sugar
9 Sprigs of Mint, optional) for garnish


Preheat oven to 350 degrees F.

In a bowl, beat together the eggs, milk, sour cream, sugar and extract until well blended. Add the Pamela’s Mix and the melted butter and stir until blended.

Pour ½ of the batter into a greased 9x9 baking pan. Bake for 10 minutes.

In the meantime, make the filling. Beat together the ricotta, cream cheese, eggs, sugar, extract, salt and the zest and juice of 1 lemon. Beat until creamy.

Slowly pour the filling over the semi-cooked batter. Then very gently spoon the remaining batter over the filling. You want the batter to float on top of the filling.

Bake for 45 minutes or until the center is firm.

In the meantime, make the sauce. Select 3 or 4 of the nicest berries and thinly slice to use as a garnish. Rough chop the remaining strawberries into pea-sized pieces.

In a small sauce pot over medium high heat, add 1/2 of the chopped berries, balsamic vinegar and ½ cup of sugar. Bring to a boil and stir vigorously. Reduce heat to a slow boil. Stir occasionally and cook until the sauce thickens, generally about 20 minutes.

Remove sauce from heat. Stir in the remaining chopped strawberries and set aside. Once the Blintz Bake is done, allow it to rest for 10 minutes. Run a knife around the perimeter of the pan. Cut the Blintz Bake into 9 squares and gently remove each one placing them on extra-large muffin liners and arrange them on a serving platter.

Just before serving, top with your favorite jam or the Balsamic Strawberry Sauce and garnish with the sliced strawberries and mint sprigs.

Helpful Tips:

Christmas morning is made easier by baking the day before and refrigerate. Remove from refrigerator at least 30 minutes before serving at room temperature. Reheating is not recommended.
