Chilaquiles

This traditional dish is perfect for brunch, the tortillas are fried to perfection and cooked with eggs, cheese, garlic and veggies.Ingredients
- 2 tablespoons vegetable or olive oil
- 4 corn tortillas, broken or cut into bite sized pieces
- 1/2 onion, chopped
- 1 rib celery, chopped
- 1 clove garlic, chopped
- 4 ounces queso fresco
- 1/4 cup milk, or to taste
- Salt and pepper to taste
- 4 eggs

Method
In a large heavy skillet, heat oil on medium high. Drop tortilla pieces into oil, keeping them separate with a spatula. Fry until edges turn brown and crispy. Stir in onion, celery and garlic then cook until just beginning to soften. Stir in cheese, breaking it up a bit. Stir in milk. Let cook until cheese is melted but tortilla pieces are still crispy. Separately, fry eggs. Place chilaquiles on individual serving plates, topped with a fried egg.
