Christmas Italian Brunch Casserole

Ingredients:
| 2 tsp | Olive Oil |
| 6 | Eggs, beaten |
| ½ tsp | Italian Seasoning |
| ½ tsp | Garlic Powder |
| ½ tsp | Salt |
| ½ tsp | Cracked Black Pepper |
| 1½ cups | Shredded Provolone & Mozzarella |
| 1 | Onion, chopped finely or grated on a box grater |
| 3 cups | Shredded Potatoes, about 4 if you're making your own |
| 4 oz | Cooked & Crumbled Pancetta or 4 Slices Bacon, cooked and crumbled |
| 8 | Grape Tomatoes, cut in half |
| Few Basil Leaves, shredded | |
| ¼ cup | Asiago Cheese, shredded |
| ¼ cup | Heavy Cream |
Directions:
Grease a 2 qt casserole with the olive oil. Mix together eggs, seasonings, provolone/mozzarella, onion, and potatoes; pour into casserole. Top with pancetta, grape tomatoes, basil, and asiago cheese. Drizzle with cream. Cover with foil and refrigerate. To serve, preheat oven to 400 degrees. Bake for 1 hour, covered. Uncover last 30 min. Casserole is done when a fork comes out clean in the middle and is firm. Let stand 10 minutes before serving.
Helpful Tips:
While everyone is waking and having coffee, I put this overnight casserole in the oven. It's easy to make and smells wonderful while we put on some holiday music and enjoy the morning.
