Citrus Souffle Pancakes

The addition of lemon yogurt and lemon zest to the batter makes for a great citrus addition. The sauce is made of orange marmalade and mandarin oranges.
Ingredients
- 1/2 cup lemon yogurt
- 1/4 cup lemon juice
- 1 tsp lemon zest
- 1/4 tsp lemon extract
- 3 egg yolks
- 1/4 cup butter, melted
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/4 cup sugar
- 3 egg whites
- Orange sauce:
- 3/4 cup orange marmalade
- 1/2 cup water
- 1 15 ounces can mandarin orange segments, drained
- Mint sprigs for garnish, optional

Method
In a large bowl, mix together yogurt, lemon juice, zest, extract, egg yolks and butter until well blended. Combine flour, baking powder and sugar in a small bowl, then add to liquid ingredients, stirring until just moistened. Beat egg whites until soft peaks form, then gently fold into batter. Heat a large nonstick griddle pan or skillet, over medium high heat, spraying with nonstick vegetable spray. Scoop 2 tbsp batter and pour into pan. Cook until bubbles break the surface of each pancake. Turn over and cook 1 minute. Remove to a plate and keep warm while making remaining pancakes. In a small saucepan, combine sauce ingredients and gently heat until warmed through. Top each serving of pancakes with sauce. Garnish with mint sprigs, if desired.
