Cocoa Pancakes with Chocolate Mint Sauce

Two classic flavors combined--light and fluffy chocolate pancakes, served with a creamy chocolate mint sauce.
 

Ingredients

  • Chocolate Mint sauce:
  • 1 cup heavy cream
  • 1 7 ounce milk chocolate bar, finely chopped
  • 1/2 teaspoon mint flakes, optional
  • Dry mixture:
  • 1/2 cup cocoa powder
  • 1 1/4 cup all purpose flour
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • Wet mixture:
  • 2 whole large eggs
  • 1 large egg yolk
  • 3/4 cup well shaken buttermilk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Other:
  • 3 tablespoons vegetable oil for griddle or skillet
  • Mint sprigs for garnish, optional

Method

In a medium mixing bowl, place chopped chocolate. In a small heavy saucepan, over medium heat, bring cream to boil. Pour hot cream over chocolate, gently whisking until smooth. Add mint and blend then set aside. In a large mixing bowl, sift together all dry ingredients. Whisk in eggs, yolk, buttermilk, oil and vanilla until combined well. Heat a griddle or large heavy skillet, over medium high heat, until hot enough to make drops of water scatter. Brush with oil. Spoon batter, 3-4 tablespoons for each pancake, on skillet and cook until bubbly and dry around edges. Flip and cook until golden brown. Brush skillet with oil, as needed. Continue until all batter is gone. Remove from heat, drizzle with sauce, and garnish with mint sprigs.

 

Notes: Makes 14 3 inch pancakes in 30 minutes.
