Hash browns are layered with onions, green peppers, cheese, and eggs and then topped with ham and cook all night in the crock pot for a simple breakfast.

12 Medium Eggs
½ cup Milk
9 Large Hash Brown Potato Patties or 1 Large Bag Hash Browns
2 Medium Onions, sliced and separated into rings
2 Medium Green Peppers, sliced
1 pkg Shredded Cheese, cheddar, swiss, or mozzarella
3 slices Ham or Breakfast Meat of Choice, chopped


Whisk together the eggs and milk, then set aside. Grease a crock pot with oil. Place a layer of hash browns in the crock pot, add some onions, a layer of green peppers, then sprinkle some cheese on top and add a layer of ham pieces. Start all over again and layer the hash browns, onions, peppers, cheese, and ham. When done layering, pour the egg and milk mixture over everything. Place a lid on the crock pot, turn on low heat and go to bed.
