This make-ahead breakfast idea combines beaten eggs, cheeses, asparagus, ham, Bisquick, milk and seasonings to chill and bake the next morning.

  • Servings: 8-10

Ingredients:

6 Eggs, beaten
½ cup Shredded Mozzarella
1½ cups Shredded Sharp Cheddar Cheese
14.5 oz can Asparagus, or fresh cooked asparagus), drained
8 oz Diced Ham
2 tsp Minced Dried Onion
1 tsp Parsley
1 tsp Dry Mustard, or to taste
Salt & Pepper, to taste
1 cup pkgd Biscuit Mix
2 cups Milk
8 slices Pepper-jack Cheese

Directions:

Whisk everything into the beaten eggs except the pepper-jack cheese. Spray a 9x13-inch baking dish or pan with nonstick spray. Add egg mixture. Cover and chill overnight.

To serve, preheat oven to 350 degrees. Bake about 1 hour, or until center is set. At the last 10 minutes of baking, arrange the pepper jack cheese on top, and continue to cook until cheese is melted and gooey.

Helpful Tips:

I call this one, Easter Morning, because it is assembled the night before. In the morning, pop in the oven while the kids are hunting eggs. This is also a great Christmas morning dish, because everyone can be opening presents while breakfast cooks. This is also great for overnight guests; saves you from being a short-order cook for breakfast. This can also be a catch-all for your leftovers--add mushrooms, crispy bacon, sausage, anything that you like.
