Easy Belgian Pot Pie

A pot pie made with a waffle iron! Just pour batter on the iron, add chicken and veggies, and cook until brown.
 

Ingredients

  • 1 1/2 cup Belgian waffle mix
  • 1 egg
  • 3 tablespoons oil
  • 3/4 cup vegetable or chicken broth
  • 1 cup diced mixed vegetables: corn, carrots, peas
  • 1/2-3/4 cup finely diced cooked chicken

Method

Lightly grease and heat a Belgian waffle iron. Mix first three ingredients together with a whisk until smooth. Mix in vegetables and chicken. Pour 3/4 cup batter onto waffle iron and close lid. Cook until golden brown, or as directed on iron. Top with a dollop of butter or gravy.
