Diced ham, Jack cheese, green pepper and onion are baked in a shell of shredded hash browns, with an egg and milk mixture poured on top.

2 cups Frozen Shredded Hash Brown Potatoes, thawed (with any excess water removed
⅓ cup Margarine or Butter, melted
1 cup Diced Fully Cooked Ham
1 cup Shredded Monterey Jack Cheese
¼ cup Diced Green Pepper
¼ cup Chopped Onion
2 Eggs
½ cup Milk
Salt & Black Pepper, to taste


Preheat oven 425 degrees. Press hash browns in a greased 9-inch pie plate. Drizzle with margarine and bake for 25 minutes. Meanwhile, combine ham, cheese, green pepper and onion. Spoon mixture into baked crust. In a small bowl beat eggs, milk, salt and pepper. Pour over ham and cheese mixture. Reduce oven heat to 350 degrees and bake 25-30 minutes or until done. Allow to stand for 10 minutes before serving.
