Egg and Ham Muffins

This recipe is a change from the ordinary breakfast egg and there are many ways you can change up the recipe if you want variety.

6 Eggs
3 Tbsp Milk
5 slices Turkey Ham
4 Gherkin Pickled Cucumbers
1 Small Red Onion
1 tsp Olive Oil
1 Tbsp Lifeway Farmer Cheese
2 Tbsp Feta Cheese Crumbled
½ tsp Red Pepper Flakes
½ tsp Salt
¼ tsp Black Pepper


Preheat oven to 350 degrees. Place the eggs in a bowl, then add the milk and mix well. Chop the red onion and saute with the olive oil until soft, then add salt and black pepper to taste and let the sauteed onions cool down. Dice the ham and pickles in small pieces. Add the cooled onions, ham, diced pickles, farmer cheese and crumbled feta to the egg mixture. Season with red pepper flakes, black pepper and salt, then mix well. Divide the mix among 12 prepared muffin cups and bake for 25 minutes. When cooked, remove the egg muffins from the baking pan and serve hot or cold.
