An easy and tasty breakfast casserole for breakfast or brunch. Good served with a bowl of fresh fruit.

½ lb Bacon
4 Tbsp Butter
2 cups Cubed Bread
1 cup Shredded Cheddar Cheese
4 Eggs
1 cup Milk
1 Green Onion, finely chopped
3 tsp Dry Mustard
¼ tsp Sea Salt
Freshly Ground Pepper, to taste


Preheat oven to 425 degrees. Cook bacon until crispy and break into 1-inch pieces; set aside. Melt butter and place in 1-quart casserole. Add bread cubes and sprinkle with cheese; toss well. In a small bowl, combine eggs with milk, onion, and seasonings. Stir egg mixture gently into cheese and bread. Sprinkle with strips of bacon and green onion. Bake, uncovered, for 25 minutes. Let stand for 5 minutes before serving.
