Eggs in a Rice Nest

This unique casserole is perfect for breakfast or brunch--a tomato flavored mix of rice and onions with eggs.
Ingredients
- 1 large onion, chopped fine
- 2 cups cooked fluffy rice
- 4 tablespoons butter
- 1 teaspoon salt
- 1/4 cup ketchup
- 4 eggs

Method
Combine onion and rice. Melt butter in a frying pan. Add onion and rice mixture then stir in salt. Cook, stirring constantly, until onion is limp. Stir in ketchup. Turn mixture into a shallow casserole and make a hole in center. Crack eggs carefully and slip into hole. Bake in a 350 degrees oven until eggs are set, 10-15 minutes. Serve immediately.
Notes: Serve this dish as a main course for breakfast or brunch.
