Farmer's Eggs

All of your favorite breakfast ingredients prepared in one pan. Start with the bacon, add the potatoes and finish with the eggs.
 

Ingredients

  • 1/4 pound bacon or bologna, thinly sliced
  • 2 large uncooked potatoes, peeled and sliced thin
  • 2 eggs
  • 1 cup milk
  • Salt and pepper to taste
 
Method

Saute meat in a frying pan until browned. Add potatoes and cook over low heat about 15 minutes until tender. Drain excess fat. Beat together eggs and milk then pour over meat and potatoes. Cover pan and cook over low heat until eggs are set. Add salt and pepper to taste. Serve immediately.
