Finnish Coffee Cake

This breakfast treat uses only a few ingredients--eggs, milk, sugar and a little flour--and has no leavening other than the steam that is formed during baking.
 

Ingredients

  • 3 eggs
  • 1 cup milk
  • 1/4 cup flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt

Method

Beat eggs in a bowl with electric mixer until fluffy. Add milk, flour, sugar and salt. Beat continuously until mixture is the consistency of cream. Pour into a buttered round pan, lined with waxed paper (batter should be only 1/3-inch deep.) Bake in a 425 degree oven for 15-20 minutes. Turn out onto a serving dish and peel off waxed paper.
