Finnish Oven Pancake

This simple pancake bakes in the oven rather than on a griddle. Top with fresh berries or flavored syrup.
 

Ingredients

  • 3 eggs
  • 1 cup milk
  • 1/4 cup flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt

Method

Beat eggs in bowl of electric mixer until fluffy. Add milk, flour, sugar and salt, beating continuously. The mixture should have the consistency of thick cream. Pour into 2 buttered 8 inch cake pans lined with wax paper. The batter should be only 1/3 inch deep. Bake in a 425 degree oven for 15-20 minutes. Turn out onto a serving dish and peel off waxed paper. Serve hot.

 

Notes: You can make this ahead of time and reheat it before serving, but it's best served immediately after baking. Also makes an excellent base for fresh berries in season. Use it as you would a shortcake.
