Frittata with Red Peppers, Bacon and Cheese

A savory, simple dish for breakfast, lunch or dinner--eggs with red peppers, crisp bacon, and two kinds of cheese.
Ingredients
- 6 eggs, beaten
- 2 tbsp cold water
- 2 oz Manchego cheese
- 1/2 jar diced sweet roasted red peppers
- 1/2 lb bacon, fried and crumbled
- 2 tsp butter
- 2 tbsp fresh chopped parsley
- Salt and pepper to taste
- 2 oz mild cheddar for topping

Preheat broiler. In a medium skillet, fry bacon and pat with a paper towel to remove excess grease, then crumble. In a medium mixing bowl, whisk eggs and water until light. Add Manchego cheese, peppers, bacon, 1 tbsp parsley, salt, and pepper to eggs then combine well. Preheat a large, oven safe saute pan over medium heat. Add butter to hot pan and swirl around. Stir mixture again and pour into hot pan the allow to set up. Using a spatula, move egg from edges while tilting pan, allowing egg to run into the open spots, like making an omelet, about 2 minutes. Remove from heat, sprinkle cheddar and remaining parsley evenly over top, place under broiler about 3 minutes or just until firm and slightly brown. Serve with fresh tomato slices and whole wheat bread sticks.
Notes: This is one brunch dish that is sure to impress.
