Ham Au Gratin Quiche

Packaged au gratin potato mix is prepared and spread to form the crust, then topped with ham, peas, onion, and a seasoned egg-milk mixture for the quiche.
 

Ingredients

  • 1 box au gratin potatoes
  • 2 cups diced ham
  • 1 cup frozen or canned peas
  • 1/4 cup diced onion
  • 1/2 cup grated Parmesan cheese
  • 6 eggs, beaten
  • 1 cup milk
  • 2 tsp prepared mustard

Method

Prepare potatoes according to directions on box. Cook on stove top just until potatoes are soft. Spread potatoes on bottom and up sides of pie plate or quiche pan. Toss ham, onion and peas together, then spread in pan. Whisk eggs, milk and mustard together, then pour over filling. Bake at 350 degrees for 30-40 minutes. Let stand 5 minutes before cutting to serve.

 

Notes: Asparagus or green beans can also be used, and adding mushrooms and green peppers jazzes this up. Using egg product and skim milk lowers calorie and fat count.
