Havarti Stuffed Five Spice French Toast

A warm sauce made with peaches and blueberries is the perfect compliment to this cinnamon flavored, stuffed French toast.
 

Ingredients

  • French Toast:
  • 8 oz havarti cheese, sliced into 4 slices
  • 8 slices cinnamon bread
  • 3 eggs, slightly beaten
  • 1/3 cup milk
  • 1/2 tsp five spice powder
  • 4 tbsp butter
  • Warm Peach and Blueberry Sauce:
  • 2 tbsp butter
  • 2 medium peaches: peeled, pitted and chopped
  • 2 tbsp lght brown sugar, packed
  • 1/2 cup fresh blueberries
  • 1 tsp finely grated lemon peel
  • 2 tbsp ginger ale

Method

French Toast: Place a slice havarti cheese between 2 slices cinnamon bread, making 4 sandwiches. Mix together eggs, milk and five spice powder. Melt butter in a large skillet. Dip each side of sandwich in egg mixture. Grill in a skillet about 5 minutes, or until nicely browned. Turn and grill on other side. Serve with Warm Peach and Blueberry Sauce. Sauce: In a medium skillet, heat butter over medium heat just until melted. Add peaches and brown sugar. Cook about 3 minutes or until mixture begins to bubble, stirring occasionally. Stir in blueberries and lemon peel then continue cooking about 3 minutes, or until fruit is just heated through. Stir in ginger ale.
