Irish Breakfast Flapjacks

This great brunch treat is a perfect way to add some variety to the traditional pancakes. This dish is packed with fruit and oats.
Ingredients
- 2 1/2 cups rolled oats
- 2 1/4 cups all-purpose flour, divided use
- 1/2 cup granulated sugar
- 1 cup brown sugar, lightly packed, divided
- 8 teaspoons baking powder
- Pinch salt
- 3 large eggs
- 2 cups milk
- 2 cups blueberries and/or raspberries
- 1/2 cup butter
- 1/4 cup pure maple syrup
- Additional syrup and berries for serving

Preheat oven to 325 degrees. Prepare jelly roll pan, 17.5 x 11.5 x 1, by greasing and lightly flouring. In a large mixing bowl, combine oats, 2 cups flour, granulated sugar, 1/2 cup brown sugar, baking powder and salt. Set aside. In a medium mixing bowl, lightly beat eggs and then add milk. Mix to combine. Set aside. In a small bowl, mix berries with remaining 1/4 cup flour to keep them from floating to top of batter while baking. In a small saucepan over medium-low heat, melt butter, remaining 1/2 cup brown sugar and maple syrup until butter is completely melted. Pour syrup mixture over oat mixture and stir just until combined. Add egg mixture and stir to combine. Add flour-coated berries and stir gently until combined. Spread mixture in pan and bake for approximately 30 minutes. Remove from oven and cool slightly. Cut into approximately 4 inch squares and serve with warm maple syrup and additional berries on top.
