Italian Breakfast Panini

A tasty breakfast sandwich filled with bacon, fried eggs, tomato, mozzarella cheese, and basil pesto.
Ingredients
- 2 slices ciabatta bread
- 1 teaspoon basil pesto
- 2 thin slices mozzarella cheese
- 3 slices bacon, cooked
- 1 egg, fried with yolk cooked hard
- 3 slices roma tomato
- 2 large fresh basil leaves
- 1 tablespoon melted butter

Method
Preheat panini grill to medium heat. Or use a grill pan or 2 heavy, cast- iron skillets. On one slice of bread, spread pesto. Layer the cheese, bacon, egg, tomatoes and basil. Top with remaining slice of bread. Brush outside of top slice lightly with melted butter. Lay sandwich, butter side down, on grill or skillet. Brush butter on top of other side of sandwich. Grill sandwich until bread is crisp, golden and cheese has melted, 5-6 minutes. Transfer sandwich to a serving plate and cut in half.
Notes: These sandwiches are so easy to make. Can be made with so many varied ingredients. These are great to make and wrap up for a breakfast on the run or to take to work.
