Japanese Pancakes

The batter for these "pancakes" contains flour, milk and eggs. It's baked in two 9-inch glass dishes, then sprinkled with powdered sugar.
Ingredients
- 1/2 stick butter (1/4 cup)
- 1 cup flour
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- Powdered sugar, for garnish

Method
Preheat oven to 425 degrees. Melt butter and pour half into each of two 9-inch glass baking dishes to cover bottoms. Beat or whisk together remaining ingredients and pour half into each dish; bake 12 minutes. Sprinkle powdered sugar over the top of each dish and bake 3 more minutes.
Notes: Serve with a side dish of fruit or with fresh lemon.
