Lose Weight Swedish Lingonberry Pancakes

Lingonberries add great taste to these light pancakes made with buttermilk and oat flour.
 

Ingredients

  • 1/2 cup reduced fat buttermilk
  • 1/2 cup whole grain oat flour
  • 1 large egg white, beaten
  • 1/2 tsp baking soda
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup longonberries
  • Lingonberry sugar free low calorie pancake syrup
  • Lingonberry jam

Method

Preheat oven to 200 degrees. In a small bowl, combine buttermilk, flour, egg white, baking soda, vanilla and salt. Stir in lingonberries and let stand 10 minutes. Heat a large nonstick skillet, over medium heat, until it is hot enough to sizzle water. Briefly remove skillet from heat to mist lightly with cooking spray. Return pan to oven. Pour batter, in 1/8 cup dollops, onto skillet. Cook pancakes for 2 minutes or until bubbles appear on top. Flip when bottom is brown then cook another 2 minutes until browned. Transfer to a plate. Cover with a towel to keep warm or place in oven. Repeat with remaining batter. Place 4 pancakes on each of 2 serving plates. Serve with lingonberries and a side of lingonberries jam or pancake syrup.

 

Notes: Enjoy with any other berries and no sugar spread.
