Mandarin Orange and Sweet Cream Pancakes

This simple dish can easily be added to a weekend routine or your next brunch. The homemade sweet cream combines perfectly with the mandarin oranges.
 

Ingredients

  • Pancakes:
  • 1 cup all purpose flour
  • Pinch salt
  • 2 eggs
  • 1/4 cup milk
  • Oil for frying
  • Filling:
  • 1 cup heavy whipping cream
  • 1 tablespoon sugar
  • 1 teaspoon vanilla
  • 1 cup drained mandarin oranges

Method

In a medium bowl, mix flour and salt together. Add eggs and milk then stir to make a smooth batter. Heat a small amount of oil in a 6 inch pan. Pour in 1/4 cup of batter and swirl pan so bottom in covered. Cook until golden then flip with a spatula. Cook an additional 20-30 seconds. Remove from pan and continue with remaining batter. Make filling by whipping cream until soft peaks form. Add sugar and vanilla then whip an additional minute. To assemble pancakes, spread some whipped cream on each pancake and top with Mandarin oranges. Fold pancake like an envelope, making a rectangle shape. Sprinkle with powdered sugar and top with three mandarin orange slices.
