Mexican Brunch Strata

Make your family happy with Mexican food for breakfast--layers of tortilla chips and green chilies with eggs and cheese.
 

Ingredients

  • 4 cups coarsely broken cheese flavored tortilla chips, regular or baked
  • 2 cups shredded Monterey Jack cheese, plain or with jalapenos
  • 6 eggs
  • 2 1/2 cups milk
  • 4 ounce can diced green chilies, drained
  • 2 ounce jar diced pimientos, drained
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 3 tablespoons spicy or regular ketchup
  • 2 tablespoons chopped cilantro, optional
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon hot pepper sauce
  • Garnish:
  • Whole tortilla chips, halved tomato slices and fresh cilantro sprigs
 
Method

Sprinkle broken tortilla chips evenly in a lightly greased 12 X 7 X 2 inch baking dish. Sprinkle chips with cheese. In a medium mixing bowl, whisk eggs. Add all remaining ingredients and whisk until well blended. Immediately pour mixture over cheese in pan. Cover with foil, or plastic wrap, and refrigerate for several hours or as long as overnight. Preheat oven to 325 degrees and bake strata 50-55 minutes or until it is set and lightly browned. Let sit about 5 minutes, then garnish with whole chips around edges, and tomato slices and cilantro sprigs in center. Cut into squares to serve.

 

Notes: You can offer bowls of sour cream, chopped green onion and sliced avocados, if desired. It is also good served with some hot chorizo links. This makes a great brunch dish since it can be make the day before.
