Nettie's Ham and Egg Sandwich

Ham, eggs and cheese layered on toasted bread with tomato for a hearty early morning starter.
Ingredients
- 1 tbsp butter
- 1 tbsp vegtable oil
- 8 eggs
- 1 1/2 medium onion, chopped small
- 6 slices imported deli ham, pulled apart
- 1 quarter cup milk
- Salt and pepper to taste
- 1 medium tomato, sliced thin
- 4-8 slices American cheese.
- 8 slices white bread, toasted
- Butter for toast

Method
Heat a skillet over medium heat about 1 minute. Add oil and butter, then let cook until butter melts with oil. Add onion and cook a couple of minutes. Add ham, stirring together with onion. Mix milk and eggs together with salt and pepper to season. Pour mixture into skillet and cook an additional 5-6 minutes, or until eggs are cooked. Add cheese at the last minute. Cut off enough eggs and place on toasted white bread, buttered lightly. Top with tomato, then add salt and pepper to taste.
Notes: Cooking time varies. It depends on how well-done you like your eggs.
