Flour tortillas are filled with scrambled eggs with jalapeno, cooked sausage, Mexican-blend cheese, green chilies, and salsa.

8 oz Bulk Sausage
½ Tbsp Butter
6 Large Eggs, beaten
1 Jalapeno, seeded and chopped
⅛ tsp Salt
⅛ tsp Red Chili Pepper
6 Flour Tortillas
1 cup Shredded Mexican-blend Cheese
½ cup Diced Canned Green Chilies, drained
⅓ cup Salsa, hot or medium


In a medium nonstick pan, saute sausage until brown; drain. While sausage is cooking, melt butter in another pan and scramble eggs with salt, red chili pepper and jalapeno, until eggs are set. Microwave each tortilla about 10 seconds. Lay out the 6 tortillas. In the center of each one, place 1/6 of the eggs followed by 1/6 of the cheese and sausage. Top each with 1/6 of the green chilies, then 1/6 of the salsa. Tuck in the ends of each tortilla and roll, burrito style. Serve immediately.
