Nut or Seed Muffins

These hearty muffins make a quick on the go breakfast or go well with tea for an afternoon snack.
 

Ingredients

  • 1/2 cup chopped nuts or seeds
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1/4 cup oil
  • 1/4 - 1/2 cup honey or molasses
  • 1 1/2 cup milk

Method

Combine dry ingredients. Combine wet ingredients. Quickly fold wet and dry ingredients together, just until flour is moistened. Spoon into greased muffin tin. Bake at 350 degrees F for 15 minutes or until ready.

Number of Servings: One dozen large muffins
