|About 3/4 Cup Nutella, or other chocolate-hazelnut spread|
|8||Pieces of Challah Bread, sliced ½" thick|
|6||Strips Bacon, cooked and chopped|
|½ tsp||Vanilla, optional|
|¼ tsp||Ground Cinnamon, optional|
|Warmed Maple Syrup or Melted Nutella, to serve with, as desired|
Spread Nutella over one side of each slice of challah bread. Evenly sprinkle 4 of the slices with the chopped bacon and top with the other 4 slices, Nutella-side down, to make a sandwich. Beat eggs, milk, vanilla and cinnamon together, while you heat a skillet over medium heat. Add butter to skillet; once it is melted, dip each of the 4 sandwiches in the egg batter and place in skillet. Flip over once the bottom begins to brown (slight caramel color). Cook until both sides are cooked through. Serve with maple syrup or melted Nutella.
This recipe can be easily modified by substituting bananas or granola for the bacon. For advanced cooks, use four 1" thick slices of challah bread. Make a slit in the top crust of each to form a pocket, cutting to within 1/4" of the opposite side; fill with the spread and bacon. By doing this the sandwich will be more stable when assembling and flipping.
