Open Face Mexican Egg Bacon and Cheese Sandwich

A homemade corn meal pancake is topped with scrambled eggs, caramelized prosciutto, pepper jack cheese, salsa and hearty black beans.
 

Ingredients

  • Bread Pancake:
  • 1 1/4 cup self rising white corn meal
  • 1/3 cup self rising flour
  • 1 1/2 cup buttermilk
  • 1 large egg
  • 1 1/2 tbsp vegetable oil
  • 1 tsp red pepper flakes
  • 1 tsp garlic powder
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Other:
  • 1 cup pepper jack cheese
  • 1/2 pound prosciutto, torn
  • 1/4 cup maple syrup
  • 6 eggs
  • 1/2 cup salsa
  • 1/2 cup shredded lettuce
  • 1/2 cup black beans

Method

Mix all dry ingredients, add wet ingredients, green pepper and onion then mix well. In a hot skillet with melted butter, add 1/3 cup of batter and cook 1-2 minutes until bubbles form then flip over. Both sides should be more toasty than regular pancakes. Repeat with remaining batter. In a bowl, whisk all 6 eggs, and add to a buttered pan for scrambled eggs, add salt and pepper then cook thoroughly. In another sprayed skillet, add torn prosciutto and syrup then cook until syrup caramelizes prosciutto. In a microwave, melt pepper jack cheese about 40-60 seconds until very liquid. On the pancake, add scrambled eggs, prosciutto, melted cheese, shredded lettuce, salsa and beans. Everything is placed on top of each other.
