Zucchini, peppers, onion, and cheese are combined with cream cheese infused eggs and biscuit mix to make this simple yet tasty breakfast casserole.

1 cup Biscuit/pancake Mix
1½ cups Grated Zucchini
1 Medium Onion, grated
½-1 cup Diced Red & Green Pepper
1½ cups Grated Cheddar Cheese, divided
2 Tbsp Olive Oil
½ tsp Salt
⅛ tsp Pepper
4 oz Cream Cheese
4 Eggs
Italian Seasoning & Fresh Basil, for garnish


In a large bowl, combine the biscuit mix, zucchini, onion, peppers, 1/2 the cheese, oil, salt, and pepper. In a small mixing bowl, beat together, the cream cheese and eggs until fluffy. Add egg mixture to Bisquick mixture, and stir until well combined. Pour into a sprayed casserole or souffle dish. Bake at 350 degrees for 30-40 minutes or until golden brown. Remove from oven and top with remaining cheese, then cover with foil until cheese has melted. Garnish with a sprinkle of Italian seasoning and fresh basil leaves.
